Instructions

Mix it up:

  1. In a large bowl, combine oats, coconut, cocoa powder, and salt. Stir in softened butter (or coconut oil), maple syrup, espresso, and vanilla. Mix until evenly combined. If the mixture is too dry, add a splash of milk; if too wet, a spoonful more oats.

Chill:

  1. Let the mixture sit in the fridge for 10–15 minutes to firm up slightly.

Roll:

  1. Using your hands, roll into bite-sized balls. Coat in shredded coconut, crushed pistachios, or freeze-dried raspberries for added flair.

Serve or store:

  1. Enjoy right away or chill for 30+ minutes. Store in the fridge for up to a week or freeze for up to 3 months.
