These festive stuffing cups take two beloved traditions — American Thanksgiving stuffing and Swedish Toast Skagen shrimp salad — and combine them into one irresistible holiday bite. Crispy on the outside, tender inside, and filled with warm lemon–dill shrimp cream, they’re the perfect Scandinavian–American fusion for your holiday Smörgås table.

Ingredients
    Stuffing Cups
  • 5 cups cubed bread (sourdough, rye, or country loaf)
  • 2 Tbsp butter
  • 1 small yellow onion, finely chopped
  • 2 celery stalks, finely chopped
  • ½ tsp salt
  • ½ tsp white pepper
  • 1 tsp dry thyme or poultry seasoning
  • 1 cup vegetable or chicken broth
  • 1 egg, beaten
  • ½ tsp caraway seeds or ground allspice (Optional Nordic twist)
    • Warm Skagen Filling
  • 8 oz cooked shrimp, finely chopped
  • 2 Tbsp mayonnaise
  • 2 Tbsp sour cream or skyr
  • 1 tsp Dijon mustard
  • 1 Tbsp lemon juice
  • 1 tsp lemon zest
  • 1-2 Tbsp fresh dill, chopped
  • 1-2 tsp capers, chopped
  • ¼ tsp white pepper
  • Salt to taste

  • Tiny spoon of trout or salmon roe (festive + optional)
  • Dot of cranberry or lingonberry sauce for color
Instructions
    1. Prep the Stuffing Cups

    Toast bread cubes on a sheet pan for 8–10 minutes until dry and lightly golden.

    In a skillet, melt butter and sauté onion + celery with salt, white pepper, and thyme.

    Combine toasted bread cubes with the sautéed vegetables.

    Stir in broth and beaten egg until mixture is moist but not soggy.

    Grease a standard muffin tin.

    Press stuffing mixture firmly into each well, building up the sides to create a “cup.”
