Description

A cozy, elegant holiday appetizer featuring golden roasted potato rounds topped with creamy Skagen shrimp salad, bright lemon, dill, and capers. Ingredients
    Potato Crisps
  • 3-4 large Yukon Gold potatoes, sliced into ½-inch rounds
  • 2-3 Tbsp olive oil
  • 1 tsp salt
  • ½ tsp white pepper
  • ½ tsp garlic powder (optional)
    • Skagen Topping (Shrimp Salad)
  • 8 oz cooked shrimp, finely chopped
  • 2 Tbsp mayonnaise
  • 2 Tbsp sour cream or skyr
  • 1 Tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tsp capers, chopped
  • 1-2 Tbsp fresh dill, finely chopped
  • ½ tsp Dijon mustard
  • ¼ white pepper
  • Salt to taste
    • Optional Holiday Garnish
  • Dill sprigs
  • Extra lemon zest
  • Trout roe or salmon roe (luxurious Christmas touch)
Instructions
    1. Roast the Potato Crisps

    Preheat oven to 425°F.

    Toss potato rounds with olive oil, salt, and white pepper.

    Spread on a parchment-lined baking sheet.

    Roast 20–25 minutes, flip, then roast 10–15 more minutes until crisp and golden on both sides.

    Let cool slightly so they firm up for topping.

    In a bowl, combine chopped shrimp, mayonnaise, sour cream (or skyr), lemon juice, lemon zest, Dijon, capers, dill, and white pepper.
