Instructions

Cook the Lamb

  1. Heat Blackstone or skillet on high.
  2. Toss lamb with olive oil + seasoning
  3. Sear until browned on all sides (6โ€“8 minutes)
  4. Rest 5 minutes โ†’ slice
  5. Goal: crispy edges, juicy center

Make Tzatziki

  1. In a bowl mix:
  2. yogurt
  3. cucumber
  4. dill
  5. garlic
  6. lemon juice
  7. olive oil
  8. salt
  9. Chill until ready to serve

Prepare Vegetables

  1. Slice cucumbers
  2. Prep tomatoes
  3. Make or pull pickled elements

Make Herby Oil

  1. Mix all ingredients in a small bowl.

Warm Bread

  1. Warm pitas or flatbread
  2. Spread with roasted garlic

Assembly

  1. Do NOT toss everything together
  2. Build a large platter:
