Instructions
1. Roast the Brussels

Preheat oven to 425°F.

Toss Brussels sprouts with olive oil, salt, white pepper, and thyme.

Spread flat-side down on a baking sheet.

Roast 22–28 minutes, until deeply golden and crisp on edges.
2. Crisp the Bacon + Shallots
-
In a large skillet, cook chopped bacon over medium heat until crispy.

Add sliced shallots to the bacon fat and sauté until golden and crisp.

Optional: Add 1 Tbsp butter for extra caramelization.

Transfer to a paper towel–lined plate.
3. Make the Mustard–Thyme Glaze

In a small bowl, whisk together:

grainy mustard

Dijon
-
vinegar (or lemon)
-
honey (if using)
-
thyme
-
pinch of white pepper or allspice
4. Toss Everything Together

When the Brussels are roasted, transfer to a serving bowl.

Add the bacon + crispy shallots.

Drizzle the mustard–thyme glaze over top.

Toss gently to keep crispy bits intact.
5. Swede Dish Finish

Top with:
