Swede Dish Cloudberry–Apple Sausage Stuffing

Instructions
1. Prep the Bread (Important!)

Preheat oven to 300°F.

Spread cubed bread on baking sheets.

Toast 15–20 minutes until lightly dry and golden.

Cool completely.

(Skip if using stale bread.)
2. Cook the Sausage

In a large skillet, brown Italian sausage over medium heat.

Remove and set aside, leaving drippings in pan.
3. Sauté Vegetables

In sausage fat, sauté mushrooms until browned.

Add onion + celery; cook 5–7 minutes until softened.

Stir in apple and garlic; cook 2 minutes.

Season with salt, peppers, sage, thyme, and optional allspice.
4. Build the Stuffing

In a large bowl combine:

toasted bread

sausage
-
sautéed vegetables
-
dried cranberries
-
Gently toss.

Dot with 2–3 Tbsp cloudberry jam, folding lightly so you get pockets, not total mixing.
5. Add Liquid

Whisk:

stock

eggs
-
melted butter (and optional cream)

Pour over stuffing mixture.

Stir gently until bread is evenly moistened but not soggy.

Add extra stock if needed depending on dryness of bread.
6. Bake

Transfer to a buttered 9×13 casserole dish.

Bake at 350°F for 35–45 minutes until:

edges crisp

center warmed through

For extra crisp top: broil 1 minute.
