Ingredients

  • 2–3 medium carrots, peeled into ribbons (use a vegetable peeler)
  • 1 tbsp olive oil
  • 1 pinch salt
  • 1 tsp honey
  • 1 pinch cardamom
  • ½ tsp lemon zest
    • Cornbread Batter
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ⅓ cup sugar or honey
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 tsp ground cardamom
  • 1 cup milk (or buttermilk)
  • 2 eggs
  • ⅓ cup melted butter
  • 1 cup finely grated carrot
    • Honey Cardamom Butter
  • 4 tbsp butter, softened
  • 1–2 tbsp honey
  • pinch cardamom
  • tiny pinch salt
Instructions
