Instructions

1. Roast the Carrots & Parsnips

  1. Preheat oven to 425°F.
  2. Toss carrots and parsnips with olive oil, salt, pepper, and optional thyme.
  3. Spread on a baking sheet, cut-side down for best browning.
  4. Roast 25–30 minutes, flipping once, until deeply golden and caramelized.

2. Make the Brown Butter

  1. In a small skillet, melt butter over medium heat.
  2. Continue cooking until butter foams and turns deep golden brown with a nutty aroma.
  3. Remove from heat.
  4. Stir in dill, lemon zest, and lemon juice (if using).
  5. Add optional allspice or nutmeg for warmth.

3. Combine

  1. Transfer roasted vegetables to a serving bowl or platter.
  2. Drizzle warm brown butter mixture over top.
  3. Toss gently to coat.
  4. Adjust seasoning with additional salt, lemon, or dill.

4. Swede Dish Finish

  1. Garnish with:
