Instructions
1. Make the Dressing

In a small jar or bowl, whisk (or shake) together:

lemon juice

lemon zest

maple syrup

Dijon

salt + white pepper

Taste and adjust sweetness or lemon to your liking.
2. Assemble the Salad

Add arugula to a large bowl or serving platter.

Top with apple slices, onions, pepitas, and dried cranberries (if using).
3. Dress & Serve

Drizzle dressing over top just before serving.

Toss gently.
