This Scandinavian-American salad balances sweet, crunchy, creamy, and fresh. Instructions
1. Make the Rye Croutons

Preheat oven to 375°F.

Toss rye cubes with olive oil/butter, salt, white pepper, and optional caraway seed.

Spread on a sheet pan.

Bake 8–12 minutes, tossing once, until crisp and lightly golden.

Cool completely.
2. Make the Dressing

In a jar or small bowl, whisk together:

olive oil

lemon juice

lemon zest
-
honey
-
Dijon
-
salt + white pepper
-
Taste and adjust honey or lemon as desired.
3. Assemble the Salad

Spread arugula on a large platter or shallow serving bowl.

Layer thin apple slices on top.

Scatter red onion (if using).

Add toasted walnuts.

Add rye croutons.

Crumble goat cheese over the warm croutons (dreamy).

Finish with cracked black or white pepper.
4. Dress & Serve
