Mix: In a bowl or jar, stir together the oats, coconut milk, elderflower syrup, chia seeds (if using), vanilla, salt, and most of the sliced peaches.
2 Chill: Cover and refrigerate overnight (or at least 4 hours) to let everything soak and thicken.
3 Top & Serve: In the morning, give it a good stir. Top with fresh peach slices and toasted almonds or granola. Drizzle with extra elderflower syrup for a little sparkle.
