Description

These delicate meringues are the lightest touch on the Christmas cookie plate — crisp on the outside, airy within. Their snowy white color and fragile texture make them feel almost magical, especially when served late in the evening with coffee.

Instructions

  1. Preheat oven to 225°F (110°C).
  2. Beat egg whites and salt until soft peaks form.
  3. Gradually add sugar; beat until stiff, glossy peaks.
  4. Fold in vanilla.
  5. Pipe or spoon onto parchment-lined sheets.
  6. Bake 60–75 minutes, then turn off oven and let cool inside.
