Instructions

1. Roast the Brussels

  1. Preheat oven to 425°F.
  2. Toss Brussels sprouts with olive oil, salt, white pepper, and thyme.
  3. Spread flat-side down on a baking sheet.
  4. Roast 22–28 minutes, until deeply golden and crisp on edges.

2. Crisp the Bacon + Shallots

  1. In a large skillet, cook chopped bacon over medium heat until crispy.
  2. Add sliced shallots to the bacon fat and sauté until golden and crisp.
  3. Optional: Add 1 Tbsp butter for extra caramelization.
  4. Transfer to a paper towel–lined plate.

3. Make the Mustard–Thyme Glaze

  1. In a small bowl, whisk together:
  2. grainy mustard
  3. Dijon
  4. vinegar (or lemon)
  5. honey (if using)
  6. thyme
  7. pinch of white pepper or allspice

4. Toss Everything Together

  1. When the Brussels are roasted, transfer to a serving bowl.
  2. Add the bacon + crispy shallots.
  3. Drizzle the mustard–thyme glaze over top.
  4. Toss gently to keep crispy bits intact.

5. Swede Dish Finish

  1. Top with:
  2. extra thyme
  3. a few crispy shallots
  4. a small spoon of Dijon on the side for serving
  5. Serve hot or warm.
