  1. Preheat oven to 400°F (200°C).
  2. Season pork chops with salt, pepper, and half the allspice.
  3. In a large oven-safe skillet, sear pork chops in olive oil or butter, 3–4 minutes per side until golden brown. Remove and set aside.
  4. Add apples and onions to the skillet. Sprinkle with remaining allspice and thyme, tossing to coat. Cook 5 minutes until softened.
  5. Return pork chops to the pan. Transfer to the oven and roast for 10–12 minutes, until pork reaches 145°F (63°C).
  6. Remove pork and apples to a plate. Place skillet back on stove over medium heat.
  7. Make the sauce: Add broth, scraping up browned bits. Stir in cream, both mustards, and vinegar. Simmer 3–5 minutes until slightly thickened.
  8. Serve: Plate pork chops with roasted apples and onions, spoon sauce over top, and garnish with extra thyme.
