Almond Peach Bites

Preheat oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.

Make the dough: In a medium bowl, mix almond flour, maple syrup, coconut oil, vanilla, almond extract, and sea salt until a soft dough forms.

Shape cookies: Scoop dough by heaping tablespoons and roll into balls. Place on baking sheet and flatten gently into discs.

Top with peaches: Press a peach slice onto each cookie. Sprinkle with chopped nuts and a dash of cinnamon or cardamom if using.

Bake: 18โ20 minutes, until edges are golden and peaches are caramelized.
